Sharpening

We do not recommend steel honing as the hardness of Japanese made AUS-10 steel is very high. If the sharpening method is not right it is very easy to damage the edge,  scratch the blade or even make the knife duller instead of sharper.

Our recommendation is that you use a strop regularly and that you leave the knife to someone who works with knife sharpening when the knife get blunt. If you want to grind the edge yourself, we recommend that you choose a whetstone with 700-2000 grit.

Product care

  • A good cutting board, like soft wood, is recommended to retain the sharp edge significantly longer. Glass cutting boards can be harder wearing on your knives and are not recommended.

  • Griphinity knife series are designed for smooth slicing and cutting. Up-and-down aggressive “chopping” should be avoided.

  • Hand wash with gentle dish detergent, do not use detergent with citrus extracts or bleach, they can cause corrosion.

  • Do not use scouring pads or steel to clean the blades.

  • Dry it with an absorbent towel or cloth immediately after washing. Let it dry naturally for a few minutes before putting it back to the storage.

  • Avoid soaking the knives in the water for a long time, soaking is not good for the metal.
